BREAKFAST ON SUNDAY, OCTOBER 20, 2013

TOFU SCRAMBLE WITH EZEKIEL TOASTPOINTS

Ingredients:

-Half a block of extra firm tofu, crumbled
-One very small onion, chopped
-Handful of cherry(grape) tomatoes
-1 clove garlic
-Pinch of turmeric
-1 tablespoon dried oregano
– Pinch of red pepper flakes
-2 tablespoons nutritional yeast
-Drizzle of soy sauce to taste, salt and pepper to taste

-Toast with vegan margarine

Directions:

1. Sauté the onion on medium. Add tomatoes after a minute or two.
2. Add all other ingredients. Mix until tofu is light brown in spots and coated with seasonings.
3. Serve with toast (I like Ezekiel bread). Usually I also add spinach or something green, but didn’t happen to have any today.
