DINNER ON THURSDAY, OCTOBER 17, 2O13

VEGETABLE CASHEW CURRY

I just sautéed these in a pot:
-1 bunch green onions
-1 Chinese eggplant
-3 bunches of baby bok choy
-1 red pepper
-5 cloves garlic
-1 inch of fresh (peeled and chopped) ginger
-1 tablespoon curry powder
-1 teaspoon red pepper flakes

-Juice of 1 lime

Then added a can of coconut milk, a drizzle of soy sauce, toasted cashews, and some cubed stir-fried tofu. I had it over rice noodles.  Edited to add: I also added the juice of one lime and some basil at the end.
