DINNER ON MONDAY, OCTOBER 21, 2013

KALE AND CHICKPEA SALAD

Ingredients:
-1 bunch of kale
-1 can of chickpeas, drained and rinsed
-juice of 1 lemon
– small drizzle of agave syrup (or a pinch of sugar)
-4 green onions or ¼ cup chopped red onion
-2 avocados, chopped
-1/2 cup cilantro or basil
-handful of pumpkin seeds
-salt and pepper to taste

Directions:

Put everything in a bowl and let it sit for 5 minutes or so to let the flavours mingle.
