DINNER ON FRIDAY, DECEMBER 6

COCONUT CHICKPEA CURRY OVER COUS COUS

Ingredients:

-1 medium onion
-2 tablespoons vegetable oil
– 3 cloves of garlic
-1 tablespoon of cumin seeds
-1 can of chickpeas
-1 can of coconut milk (not light)
-1 tomato, chopped
-1 tablespoon of curry powder
-Salt to taste
-Cilantro to garnish

Directions:

In a large saucepan, sauté the onion on medium until clear. Add the garlic and cumin seeds, stir until the seeds pop. Drain and add the chickpeas, along with the coconut milk. Add the curry powder, tomato, and salt. Simmer on low for a few minutes, top with cilantro, and serve over rice, cous cous, or quinoa.
