Mr. T is Ukrainian so we made these for Christmas. It makes a lot, so we froze the leftovers to have on cold weekday nights. Not the healthiest, but comfort food is pretty awesome sometimes!
-3 large potatoes
-1 large onion
-1 tablespoon vegetable oil
-5 cloves of garlic, chopped
-1/2 cup nutritional yeast
-3 tablespoons vegan margarine
-a splash of vegetable broth
-a splash of almond milk
-salt and pepper to taste
1) Boil the potatoes in a large pot of boiling water.
2)Meanwhile, sauté the onions in the oil in a small saucepan on medium-low. When the onions just start to caramelize, add garlic and cook for one more minute. Set aside.
3) When the potatoes are soft, drain and mash them. I kept the skins on, but you can peel them if you wish. Add the onion mixture and remaining ingredients. Set mixture aside.
For the dough I used this recipe:
Make sure to roll the dough out thinly, cut out rounds, and fill with a teaspoon of the potato filling. Boil the pierogies in boiling water, about 5 at a time; when they float to the top, they are done. You can eat them just like this, but I like them pan-fried in vegan margarine. If you are freezing them, place the boiled pierogies in an air-tight container between layers of parchment paper.
