DINNER ON MARCH 5

CARROT BEET SALAD

Ingredients:

-3 carrots, grated
-2 beets, peeled and grated
– 1 can of chick peas, drained and rinsed
-1/4 cup crazins (dried cranberries)
-2 tablespoons pumpkin seeds (you can substitute any seed or nut)
-2 tablespoons sesame seeds (optional)
-1 small bunch of kale, chopped or torn into bite-size pieces
-1/8-1/4 cup olive oil
-1 lemon, juiced
-1 teaspoon of agave syrup (optional)
-salt and pepper to taste

Directions:

Put all ingredients together in a large bowl, mix and serve. I had mine with a sweet potato on the side.
